Feta Sando

When you use fresh, high quality ingredients, you don’t need to complicate things. This sando took 10 seconds to make and is a prime example of simple delicious. This is one of our favorite quick eats.

Ingredients

  • Feta

  • Fresh dill

  • Cherry tomatoes

  • Mayo

Instructions

Spread mayo and garlic puree on lightly toasted English muffin. Add Feta cheese, fresh dill, cherry tomatoes. Serve with salt and vinegar potato chips. Done. Proportions are not important, balance them as fits your taste.

Tip: What can you do with the leftover feta brine? Use it to marinate chicken wings and serve with a whipped feta and chevre dip. Like garlic and want to bump up your sando’s flavor? Add pureed raw garlic. You can find garlic spreads in Middle Eastern specialty foods stores, we have them at the farmer’s market and in chains like Whole Foods Market. You can also make it yourself. I add it to virtually everything, it’s like cheating to make flavor explosions.
