Goat Cheese & Watermelon Radish Salad with Lime Vinaigrette

Watermelon radishes are gorgeous shaved into razor thin circles with a mandoline. Radish is a little peppery, and pepper pairs excellently with goat cheese and salad. I used bear lime because I live in San Diego and have a lime tree that just won’t quit, but lemon (esp. Meyer lemon) would substitute well.

Ingredients

  • Fresh chevre, crumbled

  • Fresh salad greens

  • Walnuts

  • Watermelon radish, shaved with a mandolin into thin circles

  • Lime, (1) wedge

  • (1) 1 tsp Raw garlic spread

  • (1/4) cup Olive oil

  • Salt, to taste

Instructions

  1. Prepare salad dressing: pour olive oil into a small bowl. Whisk in a squeeze of lime, garlic spread and salt until emulsified. Set aside.

  2. Toast walnuts in a skillet until fragrant. Set aside.

  3. Plate salad greens. Top with watermelon radish, toasted walnuts, goat cheese crumbles. Add salad dressing.

Thought: Fried shallots would really up the flavor, but who has that kind of time?
